i crept dubiously into the kitchen this evening with a fridge full of vegetables and nothing i was really craving. instead of settling for a handful of honey roasted peanuts like i was tempted to do, i got a little creative and came up with a new vegetarian recipe! it is surprisingly my new favorite dish and so simple. now, i need to figure out how to eliminate the cheese.

use your eyeballs:
  • 1 zucchini, half lengthwise and hollowed (save the insides)
  • 1 yellow squash, chopped
  • pesto
  • spinach
  • a tiny bit of blue cheese crumble
  • walnuts
directions:
    • in a blender, grate zucchini flesh, squash, pesto, spinach, blue cheese
    • pour the concoction into a saucepan on medium heat until bubbly
    • steam the halved zucchini in a little bit of olive oil until tender
    • pour the pesto mixture into the hollowed zucchini halves
    • top with spinach leaves and walnuts
